Truffle Mashed Potatoes

Ingredients

  • 2 lbs Yukon Gold potatoes, peeled and cut into chunks
  • 3 tbsp VIOS truffle extra virgin olive oil
  • 1/4 cup whole milk or cream
  • 1 1/2 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 2 tbsp unsalted butter (optional)

Instructions

  1. Boil potatoes in salted water until tender, about 15-20 minutes. Drain well.
  2. Mash potatoes until smooth.
  3. Stir in truffle olive oil, milk (or cream), and butter if using.
  4. Season with salt and black pepper to taste.
