Truffle Mashed Potatoes

Ingredients
- 2 lbs Yukon Gold potatoes, peeled and cut into chunks
- 3 tbsp VIOS truffle extra virgin olive oil
- 1/4 cup whole milk or cream
- 1 1/2 tsp sea salt
- 1/2 tsp freshly ground black pepper
- 2 tbsp unsalted butter (optional)
Instructions
- Boil potatoes in salted water until tender, about 15-20 minutes. Drain well.
- Mash potatoes until smooth.
- Stir in truffle olive oil, milk (or cream), and butter if using.
- Season with salt and black pepper to taste.
