Mediterranean Breakfast Scramble

A hearty egg scramble with vegetables, feta cheese, and VIOS extra virgin olive oil for a wholesome start to your day.

Ingredients

  • 4 large eggs
  • ¼ cup milk
  • 1 tbsp VIOS premium extra virgin olive oil
  • ½ cup cherry tomatoes, halved
  • ½ cup baby spinach, chopped
  • ¼ cup red bell pepper, diced
  • ¼ cup crumbled feta cheese
  • Salt and black pepper to taste

Instructions

  1. Crack eggs into a bowl, add milk, and whisk until well combined. Season with salt and pepper.
  2. Heat VIOS extra virgin olive oil in a nonstick skillet over medium heat.
  3. Add cherry tomatoes and diced red bell pepper to the skillet. Cook for 3–4 minutes until softened.
  4. Stir in spinach and cook for 1 minute until wilted.
  5. Pour the egg mixture into the skillet, allowing it to set slightly before stirring gently.
  6. Continue to cook, stirring occasionally, until eggs are fully cooked but still soft.
  7. Sprinkle feta cheese over the scramble and cook for 1 more minute until slightly melted.
  8. Serve warm with a drizzle of VIOS extra virgin olive oil on top if desired.
