Mediterranean Breakfast Scramble
A hearty egg scramble with vegetables, feta cheese, and VIOS extra virgin olive oil for a wholesome start to your day.

Ingredients
- 4 large eggs
- ¼ cup milk
- 1 tbsp VIOS premium extra virgin olive oil
- ½ cup cherry tomatoes, halved
- ½ cup baby spinach, chopped
- ¼ cup red bell pepper, diced
- ¼ cup crumbled feta cheese
- Salt and black pepper to taste
Instructions
- Crack eggs into a bowl, add milk, and whisk until well combined. Season with salt and pepper.
- Heat VIOS extra virgin olive oil in a nonstick skillet over medium heat.
- Add cherry tomatoes and diced red bell pepper to the skillet. Cook for 3–4 minutes until softened.
- Stir in spinach and cook for 1 minute until wilted.
- Pour the egg mixture into the skillet, allowing it to set slightly before stirring gently.
- Continue to cook, stirring occasionally, until eggs are fully cooked but still soft.
- Sprinkle feta cheese over the scramble and cook for 1 more minute until slightly melted.
- Serve warm with a drizzle of VIOS extra virgin olive oil on top if desired.
