Ingredients
- 1 lb carrots, peeled and cut into sticks
- 3 tbsp VIOS garlic extra virgin olive oil
- 1 tsp fresh thyme leaves
- 1 tsp sea salt
- 1/2 tsp freshly ground black pepper
- 1 tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Toss carrots with garlic olive oil, thyme, salt, and black pepper in a baking dish.
- Roast for 30-35 minutes, stirring halfway through, until carrots are tender and caramelized.
- Sprinkle with fresh parsley before serving if desired.
